Intro: From BC 1996 edition
Prep: 25min; Bake: 1hr 20min; Cool: 15min
Makes: About 3 1/2 dozen cookies
Ingredients
- 1 cup sugar
- 1/2 cup stick margarine or butter…softened
- 1 tablespoon grated orange peel
- 2 large eggs
- 3 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/3 cup slivered almonds, toasted and chopped
- Heat oven to 350 degrees
- Beat sugar, margarine, orange peel, and eggs in large bowl. Stir in flour, baking powder, salt and almonds
- Shape half of dough at a time into rectangle, 10x3in on ungreased cookie sheet (because I was dumb I took the dough in my hands and rolled them in a log then baked them. So mine look flipping deformed haha)
- Bake about 20min or until toothpick inserted in center comes out clean. Cool on cookie sheet 15min
- Cut cross-wise into 1/2in slices (I just cut each of my logs in half and said ‘welp’). Place slices cut sides down on cookie sheet.
- Bake about 15min or until crisp and light brown. Remove from cookie sheet. Cool on wire rack.
Taste: Tastes like orange and almonds
